Avocado toast is a staple in our family for both breakfast and lunch. Anytime we want to switch it up a little, we make this savory eggplant toast. It has a wonderfully creamy texture that pairs well with added greens.
How To Make Savory Vegan Eggplant Toast

Toast bread. Add a portion of eggplant to the toast and smash with a fork to desired consistency.

Garnish with sliced tomatoes and arugula.

Finish with some salt and pepper, squeeze a fresh lemon on top, or add any other seasoning you enjoy.


Eggplant Toast
Ingredients
- 2 slices bread
- 1-2 tomatoes
- 1 cup fresh argula
- 1-2 lemon slices (optional)
- 1 cup Roasted Eggplant
Instructions
- Toast bread. Spead roasted eggplant on top, smashing lightly with a fork.
- Add sliced tomato and arugula on top.
- Garnish with fresh, craked pepper, salt, and/or squeeze fresh lemon on top.
- Serve and enjoy!
