A light, tasty lunch, enjoy this open-faced toast with roasted eggplant and fresh veggies on top.

- 2 slices bread
- 1-2 tomatoes
- 1 cup fresh argula
- 1-2 lemon slices (optional)
- 1 cup Roasted Eggplant
Toast bread. Spead roasted eggplant on top, smashing lightly with a fork.
Add sliced tomato and arugula on top.
Garnish with fresh, craked pepper, salt, and/or squeeze fresh lemon on top.
Serve and enjoy!
