Eggplant Toast

A light, tasty lunch, enjoy this open-faced toast with roasted eggplant and fresh veggies on top.

Ingredients
  

  • 2 slices bread
  • 1-2 tomatoes
  • 1 cup fresh argula
  • 1-2 lemon slices (optional)
  • 1 cup Roasted Eggplant

Instructions
 

  • Toast bread. Spead roasted eggplant on top, smashing lightly with a fork.
  • Add sliced tomato and arugula on top.
  • Garnish with fresh, craked pepper, salt, and/or squeeze fresh lemon on top.
  • Serve and enjoy!
