Vegan Black Bean Nachos

Vegan black bean nachos are quick and easy to make, yet full of flavor. Simply layer your favorite tortilla chips with these delicious toppings, and voila! These vegan black bean nachos make a wonderfully healthful and delicious appetizer or meal.

How To Make Vegan Black Bean Nachos
Start by placing your favorite tortilla chips on a baking sheet, making sure they are only overlapping slightly. Each chip needs to toast in the oven and any that are buried under others won’t get as crispy.
Drizzle chips with vegan queso, making sure each chip has some queso. Place in oven and broil for 3-5 minutes until a few chips have browned slightly and queso is hot.

Prep the rest of the toppings while trying to make the toppings relatively the same size. Make guacamole as well.

Remove chips from oven and spread toppings over the heated chips and queso. Divide chips onto two plates and finish was guacamole and cilantro. Enjoy!

Vegan Nachos (Black Bean)
Ingredients
- 1-1/2 cups Vegan Queso (Cashew)
- 4 cups tortilla chips
- 1 can black beans 15oz., drained
- 1 can black olives 15oz. drained
- 1/2 red onion medium size, finely chopped
- 2 tomatoes small, seeded and chopped
- 1 jalapeno (optional)
- 1 lime
- 1 avacado
- 1/2 tsp coarse salt
- 1/2 cup cilantro (small bunch), chopped
Instructions
- Place tortilla chips on a flat baking sheet in a single layer and drizzle vegan queso across the top.
- Place in an oven on broil for approximately 3-5 minutes, only until some chips have started lightly browning and cheese sauce is hot.
- Meanwhile, prep toppings. Peel and finely chop the red onion. Cut and remove seeds and juice from center of tomatoes and chop. Slice jalapeno into circles. Slice black olives into circles. Chop cilantro. Cut, discard pit and remove avocado flesh. Cut lime in half, slicing one half for garnish and juicing the other half.
- Make simple guacamole by mixing the avacado, salt, the juiced half of one lime, half of the cilantro, and approximately 1/3 of the available chopped onion.
- When chips have warmed, split onto plates and prepare nachos. Place all toppings on top with guacamole and cilantro to finish. Serve with lime slices and any other preferred toppings (e.g. salsa, vegan sour cream, radish slices, etc).
