Vegan Mac and Cheese
Ingredients
- 1.5 cups raw cashews
- 2 cups water
- 3 Tbsp fresh lemon juice approximately 1 lemon, squeezed
- 1/2 cup nutritional yeast
- 1/4 tsp turmeric
- 1.5 tsp salt
- 12 oz macaroni (elbow) pasta
- 1 cup panko breadcrumbs
- 1/2 tsp paprika
Instructions
- Preheat oven to 350 degrees F
- Cook pasta according to package instructions. Drain and set aside.
- Soak cashews in boiling water for 5 to 10 minutes. Heat water in microwave or use a hot water kettle then pour over cashews in a glass measuring cup or bowl.
- Blend the cheese sauce by combining cashews, fresh water, lemon juice, nutritional yeast, turmeric and salt. Blend until smooth, approximately 1 to 2 minutes.
- Add drained pasta to a casserole dish. Pour cheese sauce over the top.
- Sprinkle breadcrumbs on top and finish with paprika sprinkled on top of breadcrumbs for flavor and color.
- Bake uncovered in oven for 15 minutes. Finish by broiling for a few minutes to give the breadcrumbs a light golden color.
- Serve and enjoy.
