Vegan Mac and Cheese

Ingredients
  

  • 1.5 cups raw cashews
  • 2 cups water
  • 3 Tbsp fresh lemon juice approximately 1 lemon, squeezed
  • 1/2 cup nutritional yeast
  • 1/4 tsp turmeric
  • 1.5 tsp salt
  • 12 oz macaroni (elbow) pasta
  • 1 cup panko breadcrumbs
  • 1/2 tsp paprika

Instructions
 

  • Preheat oven to 350 degrees F
  • Cook pasta according to package instructions. Drain and set aside.
  • Soak cashews in boiling water for 5 to 10 minutes. Heat water in microwave or use a hot water kettle then pour over cashews in a glass measuring cup or bowl.
  • Blend the cheese sauce by combining cashews, fresh water, lemon juice, nutritional yeast, turmeric and salt. Blend until smooth, approximately 1 to 2 minutes.
  • Add drained pasta to a casserole dish. Pour cheese sauce over the top.
  • Sprinkle breadcrumbs on top and finish with paprika sprinkled on top of breadcrumbs for flavor and color.
  • Bake uncovered in oven for 15 minutes. Finish by broiling for a few minutes to give the breadcrumbs a light golden color.
  • Serve and enjoy.
