How to Make
Slice baguette and place on baking sheet. Bake for 5 minutes on each side until slightly browned.


Drain and rinse beans and place in a food processor. Add lemon juice and spices and blend until smooth but still a little lumpy. Slightly lumpy consistency will give it a wonderful texture.
Tips: Add 1-2 Tbsp of water if the bean mixture is too thick. Add water until desired consistency.


Spoon bean mixture onto toasted baguettes and spread to cover. Place washed arugula on top and drizzle with balsamic vinaigrette. Boom! You are done!

White Bean Crostini
Ingredients
White Bean Spread:
- 2 cups canned Cannelini or Northern Beans drained and rinsed
- 2 Tbsp extra virgin olive oil
- 3 Tbsp lemon juice approx. 1 fresh lemon squeezed
- 1-2 Tbsp water as needed to adjust consistency
- 1 Tbsp fresh thyme strip leaves off stems
- 2 clove garlic
- 1/2 tsp kosher salt to taste
- 1/8 tsp fresh pepper to taste
Crostini:
- 1 baguette sliced into thin 1/4" slices
- olive oil spray
- balsamic vinegar
- 1 cup fresh arugula
Instructions
- Cut the baguette into 1/4″ thin slices. Lightly spray or drizzle with olive oil.
- Toast slices in the oven at 400F turning once until toasted or grill them until golden.
- Pureé in a small blender all the ingredients for the white bean spread. Test consistency and add a little more water if it’s dry.
- Top each baguette slice with approximately 2 teaspoons of the white bean puree and garnish with fresh arugula.
- Drizzle with a touch of balsamic before serving.
