White Bean Crostini
A tasty, bite-sized appetizer made with small slices of toasted baguette and topped with a healthy white bean topping drizzled with balsamic vinegar. Super delicious!

White Bean Spread:
- 2 cups canned Cannelini or Northern Beans drained and rinsed
- 2 Tbsp extra virgin olive oil
- 3 Tbsp lemon juice approx. 1 fresh lemon squeezed
- 1-2 Tbsp water as needed to adjust consistency
- 1 Tbsp fresh thyme strip leaves off stems
- 2 clove garlic
- 1/2 tsp kosher salt to taste
- 1/8 tsp fresh pepper to taste
Crostini:
- 1 baguette sliced into thin 1/4" slices
- olive oil spray
- balsamic vinegar
- 1 cup fresh arugula
Cut the baguette into 1/4″ thin slices. Lightly spray or drizzle with olive oil.
Toast slices in the oven at 400F turning once until toasted or grill them until golden.
Pureé in a small blender all the ingredients for the white bean spread. Test consistency and add a little more water if it's dry.
Top each baguette slice with approximately 2 teaspoons of the white bean puree and garnish with fresh arugula.
Drizzle with a touch of balsamic before serving.
