Ingredients

  • 1.5 pounds brussels sprouts
  • 3 Tbsp olive oil extra virgin, divided
  • 1/2 tsp salt
  • 1/2 tsp black pepper freshly ground
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp maple syrup

Instructions

  • Preheat oven to 425 degrees Fahrenheit. Line a large baking sheet with aluminum foil.
  • Prepare brussels sprouts by cutting off a small end of the stem and removing no more than one outer leaf layer. Cut in halves. Some loose leaves are fine and will crisp up nicely.
  • Toss the brussels sprouts with approximately 2 Tbsp of the olive oil, the salt, and the pepper. This can be done directly on the baking sheet or we find that tossing them gently in a large sealable bag (e.g. Ziploc) makes this easier.
  • Roast veggies in oven for 20 minutes, removing from oven and turning them over halfway through.
  • Mix remaining olive oil, balsamic vinegar, and maple syrup in a small bowl.
  • Remove from oven and drizzle vinegar mix over top of veggies. Return to oven for a final 10 minutes.
  • Remove and serve.
