Healthy Vegan Oatmeal Recipe

This healthy vegan oatmeal is loaded with nuts, berries, seeds, and peanut butter…oh my! This vegan oatmeal is naturally sweet with no added sugars, yet so yummy and easy to make. Oats are, by some measures, one of the healthiest whole grains you can eat. Studies consistently show that eating oats on a regular basis may help lower cholesterol levels, promote weight loss, lower blood pressure to similar levels as many antihypertensive medications on the market today, lower blood sugar levels, and improve liver function. Eating oats, and other whole grains, is recommended as an important ingredient to helping prevent diabetes, heart disease, stroke, and obesity. Oats have a fermentable fiber, known as beta glucan, which is a super food of sorts for the gut microbiome. In other words, oats promote a healthy gut flora, which in turn, has added benefits on our overall health.
Why We Love The Healthy Vegan Oatmeal
Oatmeal is a staple in our house. It’s something the whole family enjoys and there’s so many ways to mix up the ingredients and try new combinations of toppings that it’s almost impossible to become bored of oatmeal. This is our favorite way to make oatmeal and we eat it almost every morning before work. Mornings are always a little hectic with the two of us getting ready for work and the kids getting ready for school, so this has become our go-to-breakfast. Try it and you’ll see why!
How to Make

Bring the water to a boil in a medium sized saucepan. Add oats and stir. Cook oats 8-10 minutes or until desired consistency is reached. Chop walnuts.

Portion oats into bowls. Add flaxseed, hemp seed, washed blueberries, and chopped walnuts.
Drizzle peanut butter over the top. Mix and enjoy! Alternatively, mix all ingredients in a bowl prior to adding the peanut butter. Save drizzling the peanut butter until the very end to savor the peanut butter even more!

- 1 Tbsp ground flaxseed
- 1 cup oats
- 2 cups water
- 1 cup blueberries or other fresh berry
- 1 Tbsp hemp seed
- ½ cup natural peanut butter
- ½ cup chopped walnuts or other nut
